SOUPS - Shantih’s Coconut Carrot Squash Soup
Serves 4 bowels
Ingredients:
2 cartons of Organic vegetable or chicken broth
2 cans of coconut milk
2 tsp green curry paste
½ bag of baby carrots
1 large acorn squash
Sea salt to taste
Instructions:
1. Cook carrots and squash and puree in blender or food processor
2. In a Soup pot add broth, coconut milk and green curry
3. Mix in puree to stock in pot
4. Heat to near boil and then simmer
5. Add salt
