GREENS - Kale Pesto (King of Greens)

This is a great way to add your green to all your favorite foods. Serve on soba noodles, over a vegetable, spread on a sandwich or in soup. In time you will think of more ways to use this great pesto.

Ingredients:
2 Garlic cloves, peeled
2 bunches fresh Kale leaves that have been washed and dried and packed into a measuring cup
2 bunches fresh basil packed into a cup (for best results)  or  use 2 tbs dried basil (aim for fresh as if will taste the best)
1/4 cup of fresh mint leaves, packed into a cup (optional, for a different version)
1/4 cup pine nuts or try other nuts such as walnuts
3 tbs fresh squeezed lemon juice
1/4 cup Orange Flax oil
1 cup olive oil
Sea salt and ground pepper to taste

Instructions:
1.Place garlic and some of the oil in the food processor fitted with metal blade.   Process and chop.  Add the kale, basil, and mint leaves and process more.
2.While the motor is running, add the olive oil and nuts, starting with the lesser amount of olive oil.  Add the rest of the olive oil and any lemon left.
3. Season to taste with sea salt and pepper.
