BEANS - Gisele's Broccoli & Bean Salad
This is a great salad to make ahead of time as the flavor is better the next day.
Salad Ingredients:
1/2 bunch of broccoli, cut into small pieces
10 cherry tomatoes, cut in halves
1/2 yellow pepper, cut into small pieces
1/4
red onion, cut into small pieces
1/2 cup precooked brown basmati rice
3/4 cup cooked lentils or bean of choice
( cook beans from a dried bean, after soaking over night )
Dressing
1/4 cup virgin organic olive oil
juice from a 1/2 a fresh lemon
2 tbs of tarragon
pinch of sea salt
Mix together in a salad bowl. Add dressing and toss. Taste the salad. If it’s to salty, add lemon or if to lemony add salt. Adjust to personal taste
Change it up:
Using other veggies and change the herbs to make your own great taste sensation.
